Claudio Z is originally from Bologna. Five years ago he decided to move his restaurant, Il Bischero which specializes in Tuscan cuisine, to the lowlands. “There is a strong local culinary tradition here. But the population is changing and, with it, their culinary curiosity, anyway many come here from the city.”
